The artichokes are in full season so it is the best time to enjoy its flavor with dishes in which it is the protagonist. In this recipe, artichokes are the main food and rice is an ideal companion to highlight the flavor of vegetables and not steal prominence.

INGREDIENTS (4 people):- 10 artichokes
- 300 g of white round grain rice
- Lemon juice
- 3 dl of extra virgin olive oil
- 3 grains of ground white pepper
- 1 thyme branch
Clean the artichokes discarding the hard leaves from the outside until reaching the tender and crispy. Split in half, remove the fluff from the heart if they had it, and reserve in water with lemon juice.
Put a pot on the fire with olive oil and 3 dl of water. When the oil is hot, incorporate the artichokes. Add the white peppercorns and some bay leaves. Cook until almost all the liquid has evaporated and the artichokes are tender.
Put a saucepan on the fire with water, a pinch of salt and a branch of thyme. Add the rice and cook until it is al dente.
